Building Flavour with Salt: A Chef's Guide to Types, Origins, and Use

Salt is the difference between food that works and food that doesn't. A dish can have the right technique, the right ingredients, and the right cook — and still fall flat because the salt was wrong. This is the first in the Building Flavour series: what salt actually does, where each salt comes from, and how professional kitchens use them.
What Salt Does in Food
Salt is not a flavour on its own. Its job is to amplify what's already there — waking up sweet, sour, bitter, and umami so each shows up cleanly on the palate. Four things happen when salt hits food:
Amplification. Sodium ions activate the tongue's other receptors. Correctly salted dishes taste brighter and more balanced — the same ingredients, more present.
Suppression of bitterness. Salt makes bitter compounds recede without erasing them. A pinch on radicchio, kale, or dark chocolate pulls the sharpness back so sweetness and depth can register.
Structural change in vegetables. Salt draws water out through osmosis. Textures soften; juices flow. The same mechanism acid uses.
Preservation. Salt lowers water activity, starving spoilage microbes. This is the foundation under cured foods, dried preparations, and lacto-fermentation.
Salt is not a flavour. It's a flavour amplifier that also changes texture.
Where Salt Comes From (And Why That Matters)
Every salt worth using is either evaporated from seawater or mined from ancient seabeds. The difference between two sea salts — or two rock salts — comes down to mineral profile, harvest method, and crystal structure. Same handful of sodium chloride, meaningfully different behaviour on the plate.
Camargue fleur de sel (France). Delicate flakes hand-harvested at sunset from shallow salt pans. Clean, slightly briny — Mediterranean water and clay soil at work.
Trapani sea salt (Sicily). Windmill-shaded pans, crunchier crystals. Higher magnesium gives a slight bitter edge that finishes long.
Himalayan pink (Khewra, Pakistan). Ancient seabed deposit. Iron oxide gives colour; the mineral profile gives a rounder, mellower taste than most sea salts.
Kala namak (India). Kiln-fired with charcoal and specific herbs. Iron sulphide compounds create the sulphurous, egg-like aroma that defines it.
Kosher salt (various sources). Defined by its crystal size, not by its origin. Coarse flakes, easy to pinch, and slow to dissolve — the working salt in most professional Western kitchens.
Smoked salts. A base salt (usually sea salt) is cold-smoked over specific woods. Applewood gives sweetness; oak gives structure; hickory gives depth.
Origin isn't marketing. The same chemical compound behaves differently depending on where and how it was made.

How to Use Each
Sea salt. The kitchen default. Cooking water for pasta, grains, and vegetables. Seasoning throughout the cook, in layers.
kosher. Brines, cures, and salting cabbage for fermentation. Coarse kosher flakes are the everyday cooking salt in most working kitchens — the coarse grain gives control that fine table salt doesn't.
Table salt. Baking. Fine grind measures precisely and dissolves fast. Rarely used for finishing or seasoning by taste — it dissolves too quickly to sit on the palate.
Kala namak. A small pinch on chaat, tofu scrambles, dressings, and chutneys where the sulphurous note lifts the dish.
Fleur de sel / Maldon. Used almost exclusively as a finishing salt. Sprinkled on the plate after cooking — over roasted vegetables, dark chocolate, ripe tomatoes. Gives texture and small bursts of intense salinity.
Smoked salt. Where a background note of grilled smoke would help. Tofu steaks. Roasted mushrooms. A finishing accent, rarely the main salt.
Season As You Go
Restaurant cooks season in layers. Home cooking often seasons once at the end, and the food tastes bland as a result. The layered approach:
Aromatics stage. A pinch of salt when onions or garlic hit the oil. Pulls moisture, speeds caramelisation, builds base flavour.
Main ingredient stage. More salt when vegetables, legumes, or proteins enter the pan. Seasons from the inside as the food cooks.
Reduction stage. Sauces and braises get a small pinch, a taste, an adjustment. Reductions concentrate salt — early over-salting is unforgivable.
Finishing stage. A last pinch — often flaky salt — on the plated dish, for texture and immediacy.
Layered salt isn't about adding more salt overall. It's about placing salt at the moment it does the most work. Layered salt tastes seasoned. Salt only at the end tastes flat with a salty crust.
How Salt Works on Vegetables
Salt does three things to vegetables that go beyond taste.
Draws out water. Salted cucumber, cabbage, or eggplant sweat — sometimes losing 20–30% of their weight in water. This concentrates flavour and prevents watery final dishes. It's the first step in kimchi, sauerkraut, and quick pickles.
Softens cell walls. Salt breaks down cell structure much the same way acid does. Salted slaw tenderises in an hour. Fermented pickles keep their crunch because the salt sets a specific structural state and slows further breakdown.
Seasons through in boiling water. Salted water for vegetables and pasta pulls salt into the food as it boils — seasoning it throughout, not just on the surface. "Salt the water like the sea" isn't hyperbole; that's roughly the concentration needed to season properly.
Salt does not keep green vegetables green. The vibrancy comes from short cooking times and cooking uncovered. Salt is for seasoning, not colour.
Salting Salads and Delicate Things
Salads and cut fruit are the exception to season-as-you-go. Salt them just before serving, not in advance.
The reason is what makes salt useful elsewhere: it immediately starts pulling water out of raw leaves. A salted salad left for 10 minutes becomes a wilted salad. The greens go limp, the dressing turns watery, and the plate looks tired.
Dress the salad at the last possible moment. The dressing carries the salt.
Salt sliced tomatoes right before serving. Otherwise, they release liquid — either wait or plan to include the tomato water in the sauce.
Cucumber ribbons, radishes, thin fennel. Same rule. Salt within a minute of plating.
Herb-heavy preparations (chimichurri, tabbouleh): delicate leaves collapse fast when salted early.
Things to Watch For
Over-salting reductions. Salt does not evaporate. A stock that is reduced to half doubles its saltiness. Season last, taste often.
Salt in baking is measured, not tasted. Too much slows or kills yeast. Too little makes bread taste one-dimensional. See sourdough for the 2% rule.
Iodised salt in fermentation. Iodine and anti-caking agents interfere with lactic acid bacteria. Use pure sea or rock salt for anything that needs to ferment.
Health. Excess sodium is linked to hypertension. Umami, acid, and aromatics let a cook build depth with less salt overall.
