What You'll Learn

Over three intensive weeks at The Vegan School in Goa, you'll master everything from kitchen fundamentals to advanced culinary techniques. Chef Nisha guides you through hands-on classes that build real-world skills you'll use for life.

Week 1: Building Your Foundation

Start with the essentials. You'll learn proper knife skills through chopping practice, then create fresh summer rolls that burst with flavour. Master authentic Asian dishes like phở, pad thai, and khao suey. We'll teach you cooking techniques that form the backbone of great food.

You'll also dive into bread-making (yes, gluten-free!), create a vibrant Moroccan salad, whip up matcha cookies, and build the perfect cookie sandwich. Traditional ganache rounds out your first week.

Week 2: Expanding Your Repertoire

Week two takes your skills further. Lentil crepes, Italian bruschetta, Spanish tapenade, and spiced kebabs. Dumpling-making and fresh pasta from scratch. Dal makhani, authentic Indian breads, and tofu makhani. The week ends with a coffee masterclass.

Week 3: Refining and Celebrating

The final week brings it together. Tea cake, classic French entremet, Italian tiramisu, gelato, and New York-style cheesecake. Raw cakes, sushi, and a Japanese-style salad with presentation focus. Nutrition and costing sessions give you the business knowledge to take what you've learned into a professional context. The week ends with your certificate.
