Vinegar and acid are what wake food up. Without them, dishes sit heavy on the palate — one-dimensional, dull, asleep. Add acid at the right moment, and the whole plate lifts. What Acid Does in Food
Acid does four things in cooking, and each one changes how a kitchen uses it.

Second, it breaks down cell walls in raw vegetables. The mechanism is similar to salt. Acid tenderises raw ingredients and draws water out, which concentrates flavour along the way.
Third, it denatures proteins. Citrus juice on tofu, tempeh, or seitan begins a slow chemical process that resembles cooking with heat — softening structure without a flame.
Fourth, it preserves. Lowering the pH inhibits spoilage bacteria. This is the foundation under every pickle and lacto-ferment.
Acid is more than brightness. It's a structural agent, a preservative, and the counterweight to almost every other flavour on the plate.
Where Vinegars Come From (And Why That Matters)
Vinegar is what happens when an alcoholic liquid is oxidised — by Acetobacter bacteria — into acetic acid. The base alcohol determines the character. The aging vessel refines it. Two vinegars can share the same acidity and still taste completely different because of what they were before they were vinegar.
Apple cider vinegar is fermented apple juice. Round, fruity, medium in acidity. The "mother" you sometimes see suspended in the bottle is live culture from a second ferment.
Rice vinegar comes from Japan and China. Delicate, mild, slightly sweet. Polished rice gives a cleaner flavour; unpolished rice adds depth. Standard for sushi seasoning.
Balsamic is made in Modena, Italy from cooked Trebbiano grape must, then aged in a series of wooden barrels — cherry, chestnut, mulberry, juniper — with each wood contributing something. Traditional Aceto Balsamico Tradizionale is aged 12 to 25 years. Commercial balsamic is the everyday version most kitchens use.
Sherry vinegar comes from Jerez in Spain, made from aged Sherry wine using the Solera method — a barrel-blending system that runs for years. Nutty, complex, deeply savoury. The quiet workhorse behind most restaurant vinaigrettes.
Wine vinegars. Red is bold and tannic; white is sharp and clean. Both are staples across the Mediterranean.
Malt vinegar is British, made from fermented ale. Dark, malty, punchy.
Coconut vinegar is made in Kerala and the Philippines from fermented coconut water or toddy. Mild, faintly sweet, with a tropical edge. Central to Goan and Kerala cooking.
Kokum and tamarind are not vinegars, but they play the same role in Indian kitchens. Kokum is mellow and plum-like; tamarind is deep and fruit-sour.
Distilled white vinegar is a pure, cleaning-strength acid. Reserve it for pickling brines where flavour doesn't matter.
Base alcohol + fermentation + aging vessel = flavour. Cheap balsamic and traditional balsamic share almost nothing but a name.
Citrus and Fruit Acids
Vinegars aren't the only acids worth reaching for. Ripe fruit carries its own natural sourness, and each behaves differently in a dish.
Lemons are high in citric acid and contain an aromatic oil in the zest that no vinegar can match. Use the juice for brightness at the finish; use the zest earlier, warmed briefly to release the oils.
Lime is sharper and greener than lemon. It's the go-to acid across Mexican, Southeast Asian, and much of coastal Indian cooking. Fresh lime juice fades within minutes of squeezing, so squeeze it at the plate.
Tomato is often overlooked as an acid. Ripe tomatoes carry citric and malic acid at levels close to a mild vinegar. This is why tomato-based sauces don't usually need extra acid, and why a good gazpacho tastes bright without a single drop of lemon.
Orange and grapefruit are milder. Their juice is less sour and more aromatic — better as an accent than a workhorse acid.
Fermented Brines as Acids
Some of the sharpest acids in a working kitchen aren't bottled at all. They're the liquid left behind by fermentation, and they carry lactic acid — a rounder, softer sourness than acetic.
Sauerkraut brine. The salty, lightly acidic liquid drained from fermented cabbage. A spoonful lifts soups, dals, and dressings while adding gut-friendly cultures.
Kimchi liquid. Works the same way, with extra spice and umami built in. Use it in noodle broths, glazes, and marinades — anywhere a dish needs both sourness and depth.
Kombucha vinegar is what happens when kombucha ferments past the drinking stage. An unusual, aromatic acid worth trying in dressings and finishing glazes.
Umeboshi vinegar, made from Japanese ume plums, isn't technically vinegar either — it's the brine left from salt-curing the plums. Sharp, salty, deeply savoury.
Fermented brines belong on the same shelf as vinegar. They do the same job, and nothing goes to waste in a well-run kitchen.

How to Use Each
Different acids belong at different points in a dish. Getting this right is what separates a properly seasoned plate from one that's simply sour.
Delicate acids — rice vinegar, coconut vinegar, apple cider vinegar — go into dressings, quick pickles, and dipping sauces. Add them off heat.
Cooking acids — white and red wine vinegar — hold up under heat. Reach for them when deglazing pans, building braising liquids, or making marinades.
Finishing acids — aged balsamic, sherry vinegar, aged rice vinegars — are drizzled on the plated dish. Never boil them.
Malt vinegar works with chips, batter-fried food, and hearty root dishes.
Kokum and tamarind are used in Indian and Southeast Asian applications. Kokum sits in coastal curries and refreshing kokum sarbat. Tamarind carries dals, chutneys, sambhar, and tadka-based dishes.
Lemon and lime are fast, bright, and aromatic. Squeeze them over the plate at the finish.
Sauerkraut and kimchi brine replace vinegar in dressings and cooking liquids when a dish calls for lactic softness rather than acetic sharpness.
Distilled white vinegar stays in pickling brines. Not for tasting.
When to Add Acid
Acid works differently at different stages of a cook, and where it goes in matters more than how much of it does.
At the base stage, when a hot pan meets a splash of wine, cider vinegar, or lemon juice, the acid lifts caramelised sugars off the pan surface and captures them in the sauce. This is the foundation of most stovetop reductions.
During braising, a small amount of acid at the start balances the slow-cooked richness that develops over an hour. Too much acid too early and the whole dish tastes sharp for the rest of the cook.
In reductions, acid concentrates just as salt does when the liquid boils off. Under-acidify at the start; correct at the finish.
At the finish, a splash of acid at the plate lifts everything. Aged balsamic, sherry vinegar, fresh lemon or lime — all belong here. Their aromatic compounds are delicate and evaporate under sustained heat.
Layered acid tastes clean. Acid only at the end tastes sharp. Acid only at the start tastes flat.
How Acid Works on Vegetables
Acid has three distinct effects on plant material. Some are useful; others need care.
It breaks down cell walls. Acid tenderises raw vegetables while drawing water out. This is how quick pickles work in an hour, and why a cabbage slaw goes soft ninety minutes after dressing.
It preserves colour in red and white vegetables. Acid stabilises anthocyanin pigments — the reds, purples, and whites in cabbage, beetroot, radishes, and cauliflower. A splash of vinegar in braised red cabbage keeps it vividly purple instead of turning grey.
It destroys colour in green vegetables. The opposite is true for chlorophyll. Acid turns bright green vegetables dull olive within minutes. Dress green salads at the last moment, and cook green vegetables uncovered so the acidic steam that condenses on a lid doesn't drop back into the pot and dull the colour.
Acid preserves reds and whites. Acid destroys greens. Time it accordingly.
Delicate Acids Don't Cook
Aged vinegars, fresh citrus juice, and speciality acids are rarely boiled. Their character sits in delicate aromatic compounds that evaporate under sustained heat. Aged balsamic should not simmer — 12 years of complexity can disappear in five minutes. Sherry vinegar loses its nuttiness quickly, so add it at the finish. Fresh lemon and lime juice both flatten if held over heat, so squeeze them at the plate. Citrus zest, on the other hand, benefits from brief warming because the oils release and infuse.
For cooking heat, the sharper vinegars — white and red wine, cider, malt, distilled — hold their basic sourness well. Save the delicate ones for the last thirty seconds.
Things to Watch For
A few kitchen realities are worth keeping in mind whenever acid enters the pan.
Acid reacts with iron, aluminium, and copper, which creates off-flavours and discolouration. For anything acidic that sits, use stainless steel, glass, or enamelware.
Coconut milk splits when hit with sudden acid at high heat. The proteins curdle. Reduce the heat first, add the acid gradually, and stir constantly.
Over-acidifying a dish is difficult to reverse. Salt helps rebalance the plate, and fat helps dull the sharpness, but an over-vinegared dish is hard to save. Add small amounts, taste, wait.
Fresh citrus juice can interrupt lacto-fermentation by dropping the pH too fast. Wait until the ferment finishes, then add citrus if the recipe calls for it.
Green salads wilt fast under acidic dressing. Dress at the last possible moment, or serve the dressing on the side.
Frequently Asked Questions
Is balsamic vinegar vegan?
Almost always yes. Balsamic is made from grape must and aged in wooden barrels, with no animal products in the traditional process. Some low-end commercial balsamics use isinglass or gelatin as clarifying agents, so it's worth checking the label. Most versions found on supermarket shelves are vegan.
What's the difference between vinegar and lemon juice?
Both are acids, but they behave differently in cooking. Vinegar is acetic acid — sharp, sometimes complex from long ageing.
