The Vegan Culinary Programme

Our Vegan Culinary Programme covers both foundational and advanced techniques, giving you the versatility to work in any kitchen environment. Here's what the curriculum includes:

Vegan Culinary Techniques — knife skills, fermentation, plant-based meat and dairy alternatives, raw food preparation, gluten-free vegan cooking, and no-oil cooking. You'll also make tofu and seitan from scratch.

Recipe Development and Plating — how to craft original recipes, refine your presentation, and create plant-based dishes that are as visually compelling as they are delicious.

Plant-Based Nutrition — a working understanding of plant-based nutrition and dietary planning, so you can create meals that are nutritionally complete, not just ingredient-swapped.

Food Safety and Hygiene — professional-standard food safety and kitchen practices, which are non-negotiable in any food environment.

Business and Entrepreneurship — the skills to start and manage your own vegan food business, from menu planning and costing to branding and marketing. This is the part most culinary programmes skip. We don't.
